Ginger tea is a good general tonic. If you prefer a more refreshing drink,
add ice cubes, extra sugar and lemon juice, and some crushed mint leaves.
Preparation and cooking time: 20 min
5 cups (1.2 l) water
3 tablespoon finely grated fresh ginger
6 tablespoon sugar or 5 tablespoon honey
1 pinch ground black pepper
4 tablespoon lemon or orange juice chopped mint leaves (optional)
Boil the water and ginger rapidly in an uncovered saucepan for
about 10 minutes. Stir the sweetener into the mixture until it dissolves.
Strain, pressing the ginger against the strainer to extract as much of its
essence as possible.
Then add the pepper and the lemon or orange juice. Serve hot.
